Fennel

Fennel Florence fennel, finocchio, sweet anise or just fennel are all names for a vegetable with a white bulb and a green stalk with feathery leaves. Fennel has a mild licorice flavor and can be eaten raw or cooked in a variety of ways. Both male and female bulbs are eaten. The male bulb is flatter and more elongated than the rounder female ones. They can be used interchangeably but some claim that the female is sweeter.

Fennel should be purchased with the green stalk attached and the condition of its delicate leaves is an indication of its freshness. There is a core that should be removed if it is to be eaten raw but will help keep the pieces together if grilled or braised. To prepare a classic fennel salad simply cut the bulb paper thin and dress it with a fruity olive oil and shavings of Parmesan cheese. If the fennel slices are lightly salted first they will exude some moisture which when mixed with the oil helps carry the licorice flavor through the salad.
