Parsley

Parsley Parsley is an herb that often doesn't get the respect it deserves. Relegated to a garnish or used solely to add a little color when finishing a dish ignores its potential. This is a shame because although parsley's flavor is subtle, and certainly less sexy than basil and less hip than cilantro, it adds a brightness that elevates most any dish. Tabbouleh is a perfect way to appreciate parsley when prepared as a parsley salad with bulgar rather than a bulgar salad with parsley as described in The New Book of Middle Eastern Food by Claudia Roden.
