Beets Both the greens and the root of the beet plant is edible. Several variety of beets are grown. The types commonly found in markets are usually red or golden and sometimes the chiogga which is striped. A good way to prepare beets is to roast them. Simply coat well scrubbed beets lightly with olive oil and place in a 400° oven and roast until tender. The amount of time will depend on the size of the beet.

A nice warm salad can be made from the roasted beets by combining peeling and diced pieces of the root with the greens that have been sauteed in olive oil. Goat cheese and walnuts are a classic accompaniment but other cheeses such as ricotta salata or even a mexican cotija work well.
