Separating eggs
The American Egg Board recommends using an inexpensive egg separator to keep any bacteria on the shell from contaminating the yolk or white. If a bit of yolk gets into the whites, scoop it out with a clean spoon, or else whites, wont achieve volume when beaten. Eggs are easier to separate at refrigerated, not room temperature.
