| Slicing Onions |
| Onions are one of the basic flavors in cooking, they are most important for stocks and soups. White onions are delicious cooked in stews or stir-fry's. Red onions tend to have a more subtle flavor and are delicious raw in salads. The oinon is so versitile and no matter how you slice it they are full of flavor. Onions can be minced, chopped, or sliced, remember if your knife blade is dull the cells of the onion will get smashed and release more tears. |

Peel onion by cutting off ends, and striping the papery skin. If the onion is very strong you can run the root end under cold water to subdue the strong oder.

Cut onion in half from top to bottom, slicing through the root end.

Put onion cut side down on a cutting board and thinly slice half moons. Keep your fingers behind the blade, for safe cutting and to help keep the onion from sliding.
