This delicate, ethereal cheese melts on the palate with a sweet, milky and sometimes fruity flavor. It is good to eat at any stage of ripeness, from young, not fully fured and slightly chalky to fully ripe with a bite and the texture of soft butter. As with most cheese and wine, its perfect pair is generally made with the same region. It is not surprising then that Chaource is a wonderful compliment to Champagne. Each wheel is 8 ounces.
