Representing the best of Californias broadly placed red varietal growing regions, this Cabernet blend is predominantly Cabernet Sauvignon, with touches of Merlot to round out the middle and soften tannins, and Syrah and Carignane to add complexity and layers of flavor. At harvest grapes are crushed directly to stainless fermenters, then cold-soaked to gain a rich, garnet color. After a slow fermentation with twice-daily pump-overs the Cabernet is evaluated to gain optimal flavor and color prior to undergoing malolactic fermentation. Following secondary fermentation the wine was moved to small oak barrels, with one quarter new oak toasted medium/medium plus, one quarter in once-used barrels, and much of the remainder aged in neutral barrels. On the nose youll find deep, rich aromas of blackberry, cassis, cherry and vanilla, with evident spice from the oak and a hint of herbs. Tasting delivers a rich layered texture of ripe blackberry mocha, toffee and vanilla. Medium to firm tannins provide structure and balance to this medium-bodied Cabernet. Excellent now, the wine will continue to evolve and mature nicely in the bottle for several years to come.
