Tequila
|
Tequila is an alcoholic drink made from fermented and
distilled sap of the agave plant. The name is taken from a small town in Jalisco
Mexico. Tequila was first distilled by the Spanish Conquistadors but the
native people had been cultivating agave and making a drink called Pulque long
before their arrival. Tequila has become an icon of Mexican nationality, pride
and culture, recognized worldwide. Tequila is the main ingredient of a
Margarita and it is also enjoyed straight up or on the rocks. Several classifications
of tequila exist.

Plata or Blanco (Silver or White)
|
|
These tequilas are clear, un-aged and usually bottled
immediately after distillation.

Joven or Suave (Young or Smooth)
|
|
These tequilas are golden in color which may be due to the addition of coloring or
herbs. After distillation they are aged for one or two months.
|
|
Reposado
|
|
Reposado means rested and is the first definitive level of aging. Reposado tequilas
have been aged from two to twelve months in wood tanks which imparts flavor and
color to the tequila. Reposado tequila is often labeled and referred to as
gold tequila.

Anejo
|
|
Anejo means vintage and for tequila to receive this classification it must be aged for at
least one year. American whiskey barrels, cognac barrels or French oak casks
are commonly used and the aging time is usually between one and three years. Anejo
tequila is darker and more complex in flavor than reposado tequila.
