| 10 Years Old Tawny is a light, medium tawny-colored wine. The aroma is clean, showing a good balance of sweetness and acidity mingled with a soft nuttiness permeating through the rich complexity of wood-aged wine. It is round and delicate on the palate, yet crisp and lively with a soft, mellow background and a good long aftertaste. The crispness and "grip" that are the hallmark of Cockburn's tawnies come from the judicious blending and the continuous refreshing of these wood-aged wines. The Cockburn's style is less sweet than most other tawnies, which gives it a firmness on the palate and helps to avoid the cloying effect of many aged wines. Serve 10 Years Old Tawny port with cream desserts, such as cheesecake, crème brulee or flan, or simply pecans or almonds. The 10 Years Old Tawny can also be served slightly chilled as an aperitif, and served with almonds or pecans. Older tawny ports are known as "indicated age." These wines carry an indication of the blends age on the label, given in multiples of 10 years (Cockburns 10 and 20 Years Old). Portuguese law allows for the age to be approximate. Cockburns 10 Years Old is blended from older, mature wines aged in cask and then refreshed by the addition of younger wines. The "indicated age" is the average age of the wines in the blend. This wine is notably sweeter than the 10-year-old Tawny, and much more concentrated, yet displays the characteristic Cockburn's style of freshness and grip. The 20 Years Old Tawny is wonderful with rich cream-based desserts, such as crème brulee, cheesecake or flan. It also makes a special treat when served alone, slightly chilled, perhaps with almonds or pecans. Older tawny ports are known as "indicated age." | Fine Tawny is aged for about the same amount of time as Cockburns Fine Ruby (about three years), but in smaller barrels to hasten aging to a reddish amber (tawny) color and to develop a smoother, nutty flavor. Many of these wines are also left "upriver" in the Douro Valley to age in the hotter climate (the "Douro Bake"), thus speeding the aging process and lightening the color. Tawny port is bottled filtered and ready to drink. Tawny is a smoother, more mellow drink than Ruby. From its aging in wood, Cockburns Fine Tawny loses some of its color and sweetness and acquires the classic nutty/butterscotch flavor of tawny port. This wine is produced from grapes grown in the lower Douro, which are less pigmented and better suited for tawny port. Cockburns Fine Tawny has a smooth full flavor with a toffee nose. As a dessert wine, Fine Tawny pairs well with cream-based desserts such as cheesecake or crème brulee. Cockburns Fine Tawny may also be enjoyed chilled, and served with almonds or pecans. |
